Characteristics of
Allulose

  • Monosaccharide : Allulose is a monosaccharide composed of a single sugar molecule, absorbed without digestion in the body.
  • Low Calorie : Allulose is barely metabolized in the body, providing only about 0.2~0.4 kilocalories per gram.
    This is approximately 10% of regular sugar.
  • No Blood Sugar Impact : Allulose does not raise blood sugar or insulin levels,
    making it suitable for diabetics or those following low-carb diets.
  • Natural Occurrence : Allulose naturally exists in small amounts in figs, raisins, maple syrup, wheat, etc.
    However, commercially it is mainly produced by enzymatic treatment of fructose.
  • Sweetness : Allulose has about 70% of the sweetness of sugar,
    with no bitter or metallic aftertaste, making it versatile for various foods.
  • Cooking Properties : Allulose has similar physical properties to sugar,
    with browning reaction and freezing point depression effects, making it suitable for various foods including bakery and ice cream.
